Per your request, here is the recipe for the yummy pumpkin muffins I took Christian. By the way, this recipe comes from my sister (thanks, Helena!). These are my kids' favorite. Enjoy!
WHOLE WHEAT PUMPKIN MUFFINS
4 c. whole wheat flour
1 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. nutmeg
2 c. brown sugar (loosely packed)
1 can (15 oz.) pumpkin (not pie filling)
1 1/2 c. milk
1/2 c. butter, melted *
4 eggs
2 tsp. vanilla
Preheat oven to 350 degrees. Combine dry ingredients in a large bowl. Add remaining and mix just until combined. Bake in muffin tins for 15 minutes. (8-10 minutes for mini-muffins) Makes about 3 dozen regular muffins. (Freeze some for after-school snacks.)
*I use 1/4 c. canola oil instead. I can't tell the difference.
Thank you for the recipe! Our whole family loves pumpkin - we make whole wheat pumpkin pancakes with walnuts that are divine! I'll try this one this week.
ReplyDeleteIt sounds like Christian is improving each day and he is so blessed to have such strong and loving families helping him at this time.
mmmmmmm.... I can't wait to try them! I wish you'd post more recipes (yeah, you don't have anything else to do!) I just have always loved anything you cook!
ReplyDeleteyum--they sound great!
ReplyDeleteThat's my kind of recipe - 4 cups, 4 eggs... BIG, Texas-style! I've been on a banana bread kick lately. I need some change! Thanks Alice!
ReplyDeleteThanks for posting that. I look forward to trying them.
ReplyDeleteSounds good!! I love pumpkin season!!

I've been looking for some good and healthy recipes. I've been inspired by your family's desire to live more healthy lives but have run into ruts trying to find good recipes. This one will be fun to try and maybe someday you will have time to post more delicious treats as it seems you're an excellent chef!
ReplyDeleteOh, I am definitely going to try this recipe!!
ReplyDeleteThank you! These are my favorite muffins from a bakery I love that is far far away from me. I am making them tomorrow morning!
ReplyDeleteThanks for sharing. I am so glad to see a recipe with whole wheat. We always cook with whole wheat in house for pizza's, pancakes, and breads and also only purchase products made with 100% whole wheat or whole grain. I have been visiting some "savings" sites lately to get back into the coupon and frugal shopping game to save money for our family, but most of the products that can be bought on sale and with coupons are for Not- so-healthy processed products. Does anyone have any suggestion on trying to live frugaly AND maintaining a healthy diet without purchasing all those processed white products?
ReplyDeleteGlad your feeling better and happy to hear Christian is doing much better as well.
I loved your muffins! Thank you for the recipe. I made them for after church refreshments yesterday and they loved them!
